Comfort Food: Puffed Oven Pancakes

Clearly, I need some distraction.

Same with kids. I love that they are enchanted by, essentially, very simple things.
They will love, love, love these pancakes. Turn on the oven light and watch it in all its glory.
Conveniently, they'll like eating them, too.

I need to mention that this is NOT my recipe. My mother would make these pancakes for the family on the rare occasion that we had breakfast for dinner. I don't think she created the recipe herself, either. So, to the inventor of the wonderous Puffed Pancake, whomever you are...thanks!

Turn oven on to 400 degrees.
Put 2 TBSP butter in shallow baking dish. (should be approx 8" in diameter with edge no more than 1 1/2" tall.)
Put pan in oven while oven is heating so butter melts. (don't let butter burn!)

In small mixing bowl, combine:
1/2 cp flour
1/2 cp milk
pinch of salt (maybe 1/2 tsp)
3 well beaten eggs
combine by whisk for about 2 mins

Pour mix into pan.
Bake 22 minutes.
Will be light colored on bottom and lower sides and will start to brown on top.
When done, it easily lifts from pan, although the center sometimes sticks just a bit.

Make sure the kids see it immediately after removing from oven, as it will fall a smidge shortly after removal.

Remove from pan with spatula.
Is already buttered.
Top with syrup or your favorite pancake toppings.

ok it is way to early, or late for that matter (1:30 AM) to be hungry!! hahaha mmmm bring me some more of that carb goodness! I made those amaretto dream cupcakes today (already ate like three... they are smaller in size, but still!!) and now you have me craving puffy pancakes! mmmmmm thanks so much for sharing this recipe. I'll have to try it out!
